
Did this dinner need 3 posts? Probably not. But once I started I felt I had to continue! Maybe it was that I really just wanted to highlight the Brussels Sprouts... Just thinking about them makes me hungry!
With our potatoes and bacon/sprout/flowers we had a pre-marinaded pork tenderloin (smithfield, I think). It was on sale at Safeway, and sometimes you just have to go with the easy option. And boy, are they easy! You literally just take the pork out of the package, place it in a baking pain (I always foil line mine, since I haven't replaced them since going GF and they are not in the best shape), and bake for 25-35 minutes, depending on the size, or until the temp reaches 160.
These pork tenderloins turn out so super juicy! It was perfect protein to go with this meal!
