
Everyone has their own pre-race dinner routine. Prior to getting diagnosed with celiac, I used to always eat Velveta Shells and Cheese for dinner the night before a race. Then I switched it over to Annie's Gluten Free Microwavable mac'n'cheese. But now that I am grain free (with the exception for an occasional GF bagel and if I meet a GF cupcake in my future!), I think this is my new go-to pre-race dinner! It's got a ton of protein and carbs and it's really easy on the tummy. We also ate at 4:30 or 5, so it was plenty of time to digest.
Reid had a cider with his late lunch/early dinner, but since I was racing the next day I stuck with soda water with lemons, strawberries, and mint in a wine glass. Classy, I know!

What We Ate:
- steak
- baked potatoes
- oven roasted asparagus
- Reid seasoned the steak with olive oil, black pepper, and my fave Lawry's Garlic Salt
and grilled it on the gas grill
- We baked the potatoes, coated in olive oil and sea salt, for an hour on 400
- with 20 min left on the potatoes, I stuck the olive oil coated asparagus in the oven
