chili-lime chili (whole 30)

Whole 30 week 3

After traveling over MLK day weekend, I needed an EASY meal that was so delicious I could eat it every day. That's where this Chili-Lime Chili comes in.


Pre-celiac diagnosis I was addicted to McCormick's chili seasoning packet. The packet made a really great batch of chili with very little work - can of tomatoes, pound of beef, some beans (if you wish), and a packet and it was DONE! But since until recently, they didn't have a gluten free version (they do now!!! But it's not whole 30), I have been experimenting with different spice blends of my own creation and I have FINALLY perfected my gluten free, whole 30 approved EASY chili!!

Whole 30 week 3

Chili-Lime Chili:
  • 3 pounds of ground beef (I use grass-fed 85% lean beef)
  • 1 large can of whole tomatoes (I use O Organics)
  • 1 large can of crushed tomatoes (I use O Organics)
  • 1 small can of tomato paste (I use O Organics)
  • 1 medium can of chopped green chilis
  • 1 small can of chopped jalapenos
  • 3 cap-fulls of Pampered Chef Chili-Lime Rub 
  • 3/4 tablespoon of salt (I used coarse ground sea salt)
  • 1/2 tablespoon of chili powder
  • 1/2 tablespoon of cumin
  • 3 cloves minced garlic 

Here's the How To: Brown all the meat, so that you can eat a bowl as soon as the tomato part warms up!

Mix all the other ingredients into your crockpot and combine well. Taste and make sure it tastes super yummy! Then add the cooked ground beef and cook on Low for 3-4 hours to let the flavors combine really well. It's gets yummier the older it gets! It's really that EASY!
