cauliflower fried rice - whole 30

Cauliflower fried rice

This is the paleo/whole 30 version of Skinnytaste's cauliflower "fried rice". Though, as is, this is a pretty great "skinny" recipe! I love that, through food bloggers, more and more skinny/diet dishes are being made with whole foods instead of the diet, processed food that we were all eating in the 90's and early 2000's. Come on, you know you ate a whole bag of "WOW" chips because they were 1/2 the calories too! And paid for it later!! No? That was just me?... Anyway... Discovering paleo/whole foods and ditching calorie counting and learning to love fat has been the BEST thing that has happened for my nutrition/health/life. And the second best thing was the acceptance of white potatoes into the paleo/whole 30 fold. I'm 50% Irish, I need my potatoes! Okay, back to this "fried rice!"


When I made my Orange Chicken with broccoli and cauliflower and posted it to instagram, my friend Jennifer said "you should rice your cauliflower next time!" And I immediately thought "yeah, but I don't have a food processor and I don't really have the space for one, so while its a great idea, it's probably not gonna happen... cause I'm lazy" but I said just the "that's a great idea part" and moved on.

Then Michelle posted a link and a photo to Skinnytaste's caulflower fried rice and I started to think that maybe I could and should make it happen... but it wasn't until I wrote my "ode to my Pampered Chef Chopper" (my mayo recipe post) that I realized I could rice my cauliflower without buying anything more than the veggie itself! I don't want this post to be another one that rambles on about the magic that is the PC chopper, but seriously, you need one!

Here's the original recipe:

  • 1 medium head (about 24 oz) cauliflower, rinsed
  • 1 tbsp sesame oil
  • 2 egg whites
  • 1 large egg
  • pinch of salt
  • cooking spray
  • 1/2 small onion, diced fine
  • 1/2 cup frozen peas and carrots
  • 2 garlic cloves, minced
  • 5 scallions, diced, whites and greens separated
  • 3 tbsp soy sauce, or more to taste (Tamari for Gluten Free)

(pretty close to Paleo!)

Here's what I did:

  • 1 medium head (about 24 oz) cauliflower, rinsed
  • 1 tbsp sesame oil (I used chili sesame oil, then learned that it might not be Whole 30... woops!)
  • 4 whole eggs, cause I love egg!
  • pinch of salt
  • tablespoon of coconut oil
  • 1/2 small onion, diced fine
  • 1/2 cup frozen peas and carrots
  • 2 garlic cloves, minced
  • 5 scallions, diced, whites and greens separated
  • a lot of shakes of coconut aminos and extra salt


(that was easy to convert!)
