what's cooking: paleo chicken tortilla(less) soup


I have been obsessed with soup since the start of 2014. Maybe its a winter thing, maybe its because crock pot cooking is so easy, maybe it's because I like eating with a spoon... one may never know... but I do know that it's been awesome having dinner ready when I get home (did I mention that I love my crock pot?!) and enough for leftovers and to freeze for later on this month!

I did a little remix on my last version of this soup that was total crock pot friendly. For the last version I pre-cooked everything so that it literally only had to get hot to be ready to eat. I did cook it for a bit in the crock pot, but that version would have worked stove-top too.

This version was totally "dump and go" as I didn't pre-cook anything before adding it to my crock pot.

Directions: combine all ingredients in crock pot and cook on high for 5 hours. Shred chicken after 5 hours.

  • 1 carton of Kitchen Basics Chicken Stock (I use this because they label Gluten Free)
  • 1 regular can fire roasted tomatoes
  • 1 small can diced green chilies
  • 1 pablano pepper, dices
  • 2 jalapeno peppers, sliced (wear gloves)
  • 5 cloves of garlic, diced or minced
  • 1/2 of one white onion
  • 8 large kale leaves chopped with the spine removed
  • 4 boneless, skinless chicken thighs
  • juice of one lime
  • handful of chopped cilantro
  • fresh cilantro
  • chopped avocado
  • lime wedge
  • more sliced jalapenos

I also ended up repeating my roasted broccoli Saturday night as well, adding in some oven roasted potatoes!
